Once the fruit is pre-sized it's either immediately packed to fill an order or put back into cold storage to maintain crunch, crispness and flavor.

For many years Washington grower/shipper organizations have been limited to a commit-to-pack type of production process. The commit-to-pack process affects product quality by generating unneeded inventory that is stored until sold. By the time this product is sold it has already lost a great deal of freshness and in most cases might need to be re-packed before shipment which puts an added cost into the product. Pre-sizing allows the producer to pack each order "fresh to order" on demand very quickly. This means that customers won't be receiving product that has been sitting around a warehouse getting stale.
